Baked eggplant
I have been so busy these few days! So many things I want to write, so many photos I have taken but not enough time to put them online. There is a Bon Odori or Japanese Hungry Ghost festival at the Penang Esplanade tonight. Hope I manage to get there.
The eggplants I bought were baked. Does the above photo looks yummy?
Here’s my recipe
BAKED EGGPLANT
2 eggplants (huge ones like I showed in my previous post)
1 large onion, sliced
4 pips garlic
1 cup of canned chopped tomato or basic pasta sauce
1/2 cup of cream or milk
cheddar cheese (quantity according to size of your baking dish)
Olive oil, 1 tbsp butter, salt, pepper
Method:
Pare eggplant and slice crosswise. Rub with salt and boil till soft. (just a short time only). Remove eggplants and squeeze dry.
Saute the garlic and onion with butter till turn colour.
In an oven proof dish, line half the garlic/onion at the base. Layer with eggplant, chopped tomatoes, cheese, cream and again, eggplant etc till finish. Line top layer with the balance half of the onion and garlic. Drizzle olive oil, cover with cheese and sprinkle some pepper and parmesan.
Bake for 40 minutes in 200 deg C oven.
Serve as a dish or accompanied with some pasta.
