Guilty pleasure : Braised fatty, pork belly

I went to the market the other day and the butcher has this nice piece of three layers pork belly. I asked him to cut it into a nice square as I wanted to make something like what I had in Dragon-I.

So, what I had in mind is just a plain and mild flavoured soy sauce seasoning with melt in the mouth pork belly. First I rub some soya sauce on the pork belly, then, stab it with a fork. Yeah, psychically stab the slap of tough skin with a sharp fork.

Next, I pan fried the pork till the outer layer is nicely browned. Then, I add enough water to cover the pork and dropped in one star anise (as can be seen on the photo), a small piece of dried tangerine skin and some dark soya sauce to give it a light brown colour.

I also added a whole bulb of garlic for flavourings. Then, I use the pressure cooker to braise it.

It was the most heavenly taste pork belly and the guilt of eating it makes it so devilish good. I forgot to take photo until much later when half of the pork has been devoured, hence, the uneven shape.
