I hate cucumber (Old cucumber soup recipe)
I will make sure the laksa man remember to leave the cucumber out of my assam laksa.
No cucumber for me in rojak as well.
Tak mau timun in pasembor.
Just get those green stuffs out of my dish!
However, old cucumer is palatable. Old cucumbers are cucumbers allowed to grow till their skins are brown. Usually, the Chinese bought it to prepare soup. Yesterday was the first time I bother with cooking old cucumber soup (for the sake of blogging). I do not know if I need to remove the skin?
Anyway, I only remove the seeds and pulp but left the skin. Lucky thing or else the cucumber will turn to mush.
I boiled the soup with pork ribs, some red dates and garlic.
The flavour doesn’t have the ‘green’ smell of cucumber so it is not bad. Good thing with old cucumber is you can buy and store them in the fridge for a while without worrying of them turning rotten.

This nourising soup is one of our family’s favorite especially blistering hot days due to its cooling properties. I heart Chinese-styled clear soup!
