Pork floss with blanched siew pak choy
Making blanched vegetables or what Chinese call ‘Yau choy’ or oily vegetable is probably the easiest way to prepare vegetables. All you need to do is to blanched the vegetable into boiling water to cook it. Then, dribble some garlic oil, oyster sauce and you have a dish already.
However, most outlets like to decorate this dish with more frills in order to fetch a higher price. One of the things you can use is pork floss. It makes the vegetable looks yummier too. This plate is from the bak kut teh’s stall and they sprinkle a lot of crispy lard on top to make it even tastier. Not healthy, but taste good.
If the vegetables you are using easily turned yellow, dip the blanched vegetables into cold water to stop the cooking process. Any green, leafy vegetables are suitable for this preparation.
