Pork ribs noodle
Pork ribs noodle is a quick dish I made for dinner when I am too lazy to cook the regular three dishes and pot of rice meals. I got a bunch of these lovely soft bone pork ribs which are not too fat and yet, not too lean and tough.
The recipe is easy :
500 grams of pork ribs, cut into small pieces
5 pips of garlic - minced
small piece of ginger - minced
2 Chinese shitake mushroom, soaked and minced
2 teaspoons of taucheong or preserved soya beans (not to be confused with preserved black beans)
2 teaspoons of dark soya sauce
pepper to taste
A little bit of oil
Half a bowl of water

Heat oil and stir fry the minced ingredients and add the taucheong. Add the pork ribs and fry to seal in the juices. Then, add soya sauce and pepper and water and let simmer till the pork ribs are really tender.
Meantime, blanched noodles of your choice. Blanch some vegetables as well. I use snowpeas and oyster mushrooms.
To serve, just pour on some of the gravy of the pork ribs over the noodle and put a few pieces of the vegetables and pork ribs.

I like to ask if you pre-cook the pork ribs before actually frying them with the minced ingredients and tau cheong. I was told that because there can be a lot of water, it is best to ribs in a pot/wok, no water and slowly let the fat and water cook out.
