Recipe : Pork ribs with potatoes

I was hankering for something meaty and yet, not too flavourful. So, I made this stew of pork ribs with potatoes. Normally, I added lots of pounded garlic and ginger to the pork ribs but I wanted something simple and easy on the tastebuds.

Here’s what I used:

400 grams spare ribs – nice meaty ones with no fats attached

1 large potato – cut into chunks

1 carrot – cut into chunks

1 can of mushroom

1 piece of ginger – smashed

half a bulb of garlic – leave whole

1 teaspoons of preserved soya beans (taucheow)

Seasonings like soya sauce, pepper and dark soya sauce

Method : Heat a little oil and give the ginger, garlic and soya bean sauce a quick stir. Add all the ingredients and simmer till the meats are soft.

I had the stew on its own, without needing white rice. Note that I didn’t add any water? If you use a slow cooker or pressure cooker, you don’t need to add water as the juice from the meat and carrots will make them extra delicious. But if you are planning to serve it with rice, do add some gravy to it.

    Thanks for the recipe , sounds delicious! I will try as I like to use slow pot to cook , but I need to quick stir the ginger, garlic, soya bean ( taucheo ) and spare ribs first before transfer to slow pot? Do I hv to blanch the spare ribs first? Pls advise thanks
