Recipe : Sweet and sour pork ribs

The best pork ribs are those with a single bone, wrapped with meat and slightly fatty. Usually these sort of ribs are more expensive. The other type is the soft bones ribs. I normally have a supply of pork ribs in my fridge because it is so easy to make delicious dishes with them as the meat coupled with bones make very flavourful dishes.

Sweet and sour pork ribs recipe

500 grams pork ribs, cleaned and seasoned with some salt, pepper and cornflour

2 stalks celery
2 tomatoes
(cut the above into big pieces)

1 large onions
half a bulb of garlic
1 piece ginger
2 stalks chillies (or substitute with some chillies sauce)

(blend the above three ingredients into pulp)

Tomato ketchup – 6 tablespoons
sugar to taste
oil

Heat a bit of oil and stir fry the blended ingredients. Add pork ribs, celery, tomatoes and ketchup. Simmer with a bit of water. Leave over low fire for at least 45 minutes or until the meat is very soft. Flavour with some sugar.

The dish is really tasty with white rice. I use a pressure cooker and hence, you see a little bit of brownish sides on the ribs. I also have to add more water to cover the ribs. If you are simmering it with a smaller pot, try to make the dish dryer.

The recipe is almost like the sweet and sour crabs recipe.

Note that when I cook, I normally do not bother with garnishing like spring onions, chillies and etc because I do not have fresh stock of these vegetables. Actually, if your basic recipe has all the right ingredients, all these are not necessary except for pleasing the eyes.
