Recipe : Sweet corn, lotus and red dates soup
I went to the wet market today to buy some lotus roots and the lady who sells vegetables told me that lotus roots taste great with some sweet corn in the soup. So, she convinced me to buy a corn on the cob and lotus root.
Here are the basic ingredients for most Chinese soups. Some pork ribs, the vegetables consisting of corn and lotus. I have parboiled the pork ribs and washed it really clean. I hate those nasty sediments so I normally parboiled the pork ribs and leave it under running water to clean it further.
These are all the ingredients that go into my soup. I added some red dates. Red dates contain minerals and also lend a nice flavour to the soup. Then, there is the mandatory half a bulb of garlic.
I boiled about 2 bowls of water and drop all of these into the pot. Let it boil on high heat for five minutes and then, turn down heat and leave to simmer for about 45 minutes to an hour, depending on how soft you want your pork ribs to be. If you use chicken carcass or chicken bones, you do not need to boil that long.
True enough, the combination of corn and lotus really give the soup a nice flavour. In fact, it is much nicer than lotus and peanut soups. Try it! Cheap and very nutritious.

corn wid lotus roots? dats a first for me, must tell my mom cos she always make this soup :p i will go there and makan kekeke

i always boil lotus roots soup with 2-3 pieces of honeydates. They give the soup depth and a nice natural sweetness. also, throw in some peanuts for crunchiness.

i love lotus root soup! grandma always cooks this wtih carrots too, no garlic though hehe
