To quell the fire in us - Pear desserts
Lately, a lot of people are down with chicken pox due to the hot weather. Just today, a few of our choir members group shared how many of their family members were down with chicken pox. They asked me if I have already contracted chicken pox and warned me to keep my kids away from public places. Well, worry not, I have gotten it when I was pregnant and so have all my kids except those whom had been given immunisation shots.
Since the weather has gone to extreme ends, i.e. one day hot and next day non-stop shower, it is good we balance the yin yang with some cooling drinks. I just made a pot of this delicious dessert. They are made of Chinese pear, sweet osmanthus, dried jasmine flowers and white fungus.

Chinese very much prescribe to the yin and yang to balance our body system and many of the older generations dislike the idea of being treated with chicken pox immunisation jabs or taking antibiotics to reduce the infectious period and also clear discomforts. Older generation Chinese dislike the idea of Western medicine because they sometimes associate medicines with drugs which to them can be abused.
Meanwhile, I sway more to the Western type of treatment. The only reason I follow the Chinese prescription is when the foods taste good. If you have not tried Sweet Osmanthus, then, do go to those tea gallery and buy some. It is those tiny yellow flowers which has a very nice fragrance. Together with jasmine, it will help reduce phlegm and coughs.

I suppose Chinese always have a different approach to Western ways. They have the acupuncture and all kind of funny looking methods of healing a person. Meanwhile, the Western approach to treat or heal a person is different. Drug Rehab is like the Hollywood buzzword where every once in a while, a celebrity checks in. They provide the mental and physical care and helps the person to blend back into society. The place looks like a luxurious resort with all kind of facilities and enjoyment. Meanwhile, if we do it Chinese style, maybe they will stuff the person in some Shaolin bamboo jungle and teach them kung fu, eh? Hehehe.

So, if you feel a little bit of scratchy throat, coughs and feel ‘heaty’, do try this dessert recipe. It is cooling and really nice to take on hot afternoon.

I love your all your recipes, Lilian. I have not tried this tong sui before. Can you give me the recipe,i.e. amount of each ingredient and how long the concoction is boiled?

Christine - The ingredients are all there. For the water, maybe like 4 cups of water.
