“Are you serving kitchen rags?”

I have a bunch of baby spinach. You should try buying baby spinach and make a quick soup with some eggs. They taste really delicious. Just chop some garlic, stir fry with a bit of oil and maybe some dried shrimps. Add the spinach and put in some water to simmer. Then, knock an egg into it.

I decided to do something else with the spinach. I chopped one large onion, a few pips garlic, anchovies and stir fry them in a bit of oil. Then, I cut the spinach finely and added in for a quick fry to make the leaves limp.

After that, I removed the spinach/onion to a bowl and added 1/3 cup of water, two eggs and half a cup of flour. Flavour the batter with some salt and pepper. The batter should be runny but not too watery.

I made two huge pieces of spinach/anchovies/onion pancake.

Pour some chillies sauce and serve. I ate one large piece as my dinner. Meanwhile, I rolled up the other piece and place it on the plate. When my hubby came back, he asked, “Why are you serving kitchen rags today?”

Do try making savoury pancakes with either chives, spring onions, beansprouts and you can add shrimps or anchovies to get a really delicious Chinese savoury pancake.

    Wow! I don’t know baby spinach can fry with eggs. It looks yummy. I will try it one day.

    Yeah! I love this dish, it’s similar to fried oyster kind of thing, a vegetarian one. We used to serve with home made chili sauce, consists of garlic, Maggie chili sauce, chili paste, sugar, lime juice, and light soy sauce. It taste so great!
